A beginning...

I moved out to California a little more than 3 years ago from Canada. Oops, I mean Minnesota. Let's just say that the schools in California aren't all they should be and the difference between the two is minimal for most of the Californians I know! Anyway, I moved here and fell madly in love with a beautiful man who happens to be a diabetic. This presents a problem as I am the queen of Carbohydrates. Yes, yes I love them all, from bread to chocolate, cereal to pasta. I can't even cook! I only ever baked before meeting him! Well, I have learned that there are some great sugar substitutes out there and that baking doesn't mean that I have to use insane amounts of sugar. This has been a difficult realization for me. I have had to experiment quite a bit and I have to say I am quite proud of what I have accomplished. I am continuing the experiment and feel that this knowledge is worth sharing with the world. I am beginning this blog to help those looking for creative ways to bake for the diabetic in their life. I know that there are a lot of people out there who struggle with diabetes, we all know at least one. Please recommend this blog to those in your life who need it. I plan on writing new recipes and sharing my struggles with writing them. So far I have made some fabulous things like chocolate filled sugar free Twinkies, a fabulous pineapple upside down cake, and sugar free truffles.
